Butter Tart Squares

These butter tart squares are a favorite for many.  Adding the Rooibos Chai Latte as the spice creates an interesting twist to the flavour.

Base:
1 cup all-purpose flour
1/4 cup sugar
1/2 cup butter

Filling:
2 tbsp. butter, melted
2 eggs lightly beaten
1 cup brown sugar or coconut sugar
2 tbsp. flour
1 tsp. baking powder
1 tsp. vanilla
1/2 tsp. salt
4 tsp. Rooibos Chai Latte mix
1/2 cup raisins
1/2 cup chopped walnuts

Base: Mix flour with sugar. Using a pastry cutter or two forks cut in butter until it resembles fine crumbs. Press into a parchment paper lined 9 inch square pan. Bake at 350° for 12-15 minutes.

Filling: Whisk butter with eggs in a medium bowl. Stir in sugar, flour, baking powder, salt, vanilla and Rooibos Chai Latte mix until well blended. Stir in raisins and walnuts. Pour over base and bake in 350° oven about 20 – 25 minutes or until top springs back when lightly touched. Let cool on cooling rack. Cut in desired size of squares.

Blend of REAL chai spice powders, ginger, cinnamon, lemongrass, cardamom & cloves with rooibos extract powder, all ORGANIC. Add this to your smoothies or make it up with your favourite milk. We use and recommend almond milk when we make a cup to go in our stores.
