Smokey Lentil Burgers

2 cups of water
2 Tbsp. Smokey Russian Caravan or Lapsang Souchong Black Tea
2/3 cup green lentils
2 eggs
1 tsp. each paprika, garlic powder, cumin
1/2 tsp. each cinnamon and salt
1/2 cup whole wheat bread crumbs
5-6 Burger buns

Place water in a saucepan and bring to a boil. Remove from heat and add tea. Let steep for 5 minutes then strain into a heat proof container. Transfer back to original saucepan. Rinse lentils and place in hot tea. Bring back to a boil, reduce heat and simmer for 20 – 25 minutes or until lentils begin to soften. Remove from heat and let stand for another 10 minutes or until most of the remaining liquid is absorbed. Place lentils and eggs in a food processor and process until almost smooth. Pour mixture into a bowl and add spices. Mix to combine. Stir in bread crumbs until the mixture thickens. Let stand about 5 minutes to absorb the excess moisture.   It should be sticky enough to holds its shape once put in the pan.

Preheat skillet can scoop about 1/3 cup of lentil mixture into the pan. Use spatula to form into a patty approximately 1/2” thick. Cook over medium heat for approximately 5 minutes per side. Serve on a bun with your favourite toppings. These burgers could also be cut up and served cold in a salad to add a source of protein. Makes 5-6 burgers.
