Baked Apple Pancake

This easy to make apple pancake is baked in the oven and tastes great for breakfast or as a dessert. Using two types of apples for the base will create interesting flavour.

3 eggs
1 cup flour
1 cup strongly brewed Turkish Apple Juicea Fruit TEA (1 1/2 tbsp. TEA steeped in
1 1/4 cups water until cool. Strain TEA through sieve pressing leaves to extract liquid and measure 1cup.) Almond Crumble Fruit TEA can also be used. 1/2 cup milk or milk substitute such as almond
1 tbsp. sugar
pinch of salt
1/4 cup butter or coconut oil
2 cups diced apples—cut into 1/2 inch chunks
1 tsp. Rooibos Chai Latte mix
3 tbsp. brown sugar

Heat oven to 425°.
Whisk together eggs, flour, milk, cooled tea, sugar and salt. Set aside.
Melt butter or coconut oil in skillet on the stove. Add diced apples and sprinkle with Rooibos Chai Latte Mix. Cook on medium heat about 5-8 minutes or until apples are soft, stirring often. Sprinkle with brown sugar and continue cooking for 2 to 3 min.
Pour apple mixture into a 2L baking dish. Pour batter over apples and bake for 20 – 30 minutes or until pancake is set.

    This is a terrific winter recipe for the cold evenings watching TV or reading in front of the fire.
    I used Macadamian Nut Milk and your Apple Crumble Fruit Tea. The smell while it baked gave warmth and good feelings to the house. Thank you for a recipe that I will repeat and share with others.
    The Lemon Chiffon Rooibos is heavenly – it’s like having a piece of Lemon Meringe Pie.
