Coconut Shrimp & Rice

Cooking your rice in a flavoured Green Tea adds not only flavour but the health benefits of Green Tea.  Our Walnut Green tea has a nutty coconut flavour which is perfect for this recipe.

1 3/4 cups Walnut Green TEA ( 4 tsp. TEA steeped in 2 cups hot water (180°) for 3 minutes. Strain TEA and measure 1 3/4 cups)  Let cool.
1 cup basmati or long grain rice
1/2 cup shredded carrots
1/2 cup red pepper diced
2 tbsp. finely chopped onions
salt & pepper
1 pound large shrimp, peeled & deveined
1 egg
3/4 cup sweetened shredded coconut
1/2 cup panko breadcrumbs

Heat oven to 425°. Line a baking sheet with foil.
Combine the cooled brewed TEA, rice & 1/4 tsp. salt in a medium saucepan & bring to a boil Reduce heat to medium low; cover and simmer 15 minutes until tea is almost all absorbed. Stir in carrots, red pepper & onions; cover & simmer until all tea is absorbed. Remove from heat & let sit for 5 minutes then fluff with a fork.
Season the shrimp with salt & pepper. Beat the egg and 1 tbsp. water in a small bowl. Combine coconut & panko in another bowl. Dip the shrimp in the egg mixture & then into the panko mixture gently pressing to adhere. Place shrimp on foil and bake until cooked through; approximately 12-15 minutes.
Serve rice on top of rice.
