TEA MARINADE — STEAK & CHICKEN
Flavour before fire
Tea hits before the grill does.
STEP 1 — BREW STRONG
• 1 cup water
• 3 tbsp loose tea
• Steep 8–10 minutes
• Reduce to ½ cup
Use:
• Lapsang Souchong
• Tsar’s Blend
• Smoky Russian Caravan
INGREDIENTS
• ½ cup strong reduced tea
• 2 tbsp olive oil
• 1 tbsp soy sauce
• 1 tbsp Worcestershire sauce
• 1 tbsp maple syrup (or brown sugar)
• 1 clove garlic (minced)
• ½ tsp black pepper
• Pinch chili flakes
INSTRUCTIONS
1 Whisk all ingredients together
2 Pour over meat in container or bag
3 Refrigerate while marinating
MARINATE TIMES
• Chicken: 2–4 hours
• Steak: 1–2 hours
Do not over-marinate (tea tannins are strong)
GRILL TIP
Pat meat dry before grilling
→ better sear
→ better crust
