Fruit Vinaigrette

Using tea in your salad dressing adds flavour and cuts down on some of the calories. The added berries make it a nice thick dressing. Add a little more olive oil if you like it thinner.

3 Tbsp. olive oil
2 Tbsp. maple syrup
2 Tbsp. balsamic vinegar
3 Tbsp. brewed fruit tea – Blueberry Rooibos or Blueberry Fruit Tea or Raspberry Supreme or Raspberry Honeybush (Brew 2 heaping tsp. of the tea of your choice in
1/2 cup of boiling water. Steep until cool. Measure 3 Tbsp.)
1 Tbsp. lemon juice
1/2 cup of blueberries or raspberries

Combine all ingredients in a blender and blend until smooth. Awesome to use on salads with added fruit. Try using a base of mixed greens; add some blueberries and dried cranberries and some candied nuts.
