A soup chocked full of vegetables and delicious tea. Change the taste simply by using a different spice mix. If you are worried about caffeine choose one of the decaf green teas listed below.
1 tbsp. olive oil
1 onion chopped
4 celery stalks chopped
4 – 5 carrots chopped
2 cups mushrooms chopped
1 1/2 cups cauliflower or broccoli chopped or a mixture of both
1 – 2 tsp. Smokey Taco mix, regular taco mix, curry or other
seasoning mix of your choice
4 cups strongly brewed Green TEA regular or decaf – Fog Mountain, G&W Lemon Supreme, Decaf Sencha or Decaf Lemon are some suggestions (6 tsp. TEA steeped in 4 1/2 cups boiling water for 3 minutes. Strain TEA) 4 cups chicken or vegetable broth
Salt & pepper to taste
Brew TEA and set aside.
Heat olive oil in a large saucepan. Add onions and cook till soft – approx. 2 – 3 minutes.
Add the vegetables and your choice of seasoning mix and cook for 3 – 4 minutes or until vegetables have softened.
Add TEA and the broth and bring mixture to a boil. Reduce heat and simmer for 8-10 minutes or until the vegetables are tender. Season to taste with salt and pepper.
