Jasmine Shortbread Cookies

Infusing butter before using in your recipes is a great way to get a tea flavour to come through. Earl Grey tea would also work wonderfully in this recipe.  To infuse your favourite shortbread cookie recipe with Jasmine tea use approximately 2 tbsp. of Jasmine tea per 1/4 cup of butter. You will need to use more butter than your recipe calls for to compensate for the lost butter on the tea leaves.
