Matcha Apricot Bites

These tasty energy bites are no bake and easy to make.  Store in the freezer and grab one whenever you need a little treat.

3/4 cup cashews or almonds
1 cup dried apricots cut in half
1/4 cup unsweetened shredded coconut
2 Tbsp. hemp hearts
1 Tbsp. maple syrup
1 Tbsp. lemon juice
1/2 tsp. ground ginger
2 tsp. Matcha Green Tea Powder

Place cashews in food processor and process until fine crumbs.  Add the rest of the ingredients and process until it all starts binding together.  Roll into small balls.  Store in the fridge or freezer
