1/2 cup cranberries, raisins & dried apricots chopped
1/3 cup ground flax seeds
1 cup Milk
1 1/2 tbsp. Rooibos Chai Latte
2 1/2 cups quick cooking oats
1 1/2 cups whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 cup butter softened
1 cup packed brown sugar
1/4 cup white sugar
1 egg
Preheat oven to 375°. Lightly butter baking sheets or line with parchment paper. Whisk Rooibos Chai Latte mix into the milk. Stir chopped fruit and flax seed into the milk and let sit. Combine oats, flour, baking powder & salt in a small bowl.
In a large bowl using an electric mixer beat butter and sugar until light and fluffy. Beat in egg until creamy. Using a spoon, stir in oat mixture alternating with milk mixture, making 3 additions of dry ingredients and 2 of milk. Drop by heaping teaspoon on prepared baking sheets.
Bake for about 15 minutes or until golden brown. Makes approx. 7 dozen cookies
