Made with Real Loose Leaf Tea & Fresh Strawberries
Sweet, fruity and unmistakably strawberry, this homemade syrup gets an extra layer of flavour from Strawberry Cream Black Tea. Use it to sweeten iced tea and lemonade, stir it into sparkling water, drizzle it over pancakes or ice cream, or add a splash to your favourite summer cocktail or mocktail.
And when you’re cooking with tea, remember our rule:
Always steep strong!

Ingredients
- 2 tbsp Strawberry Cream Black Tea (SKU 4917)
- 1 cup (250 ml) freshly boiled water
- 1 cup (200 g) granulated sugar
- 1½ cups fresh strawberries, hulled and sliced
- 1 tbsp fresh lemon juice
Instructions
1. Make a strong tea concentrate.
Place the Strawberry Cream Black Tea in a teapot or heatproof measuring cup. Pour 1 cup freshly boiled water over the tea and steep for 5–6 minutes.
Strain the tea leaves, pressing them gently to extract the liquid.
2. Make the strawberry syrup.
Pour the strong brewed tea into a small saucepan. Add the sugar and strawberries.
Bring to a gentle simmer over medium heat, stirring until the sugar has completely dissolved.
3. Simmer.
Reduce the heat and gently simmer, uncovered, for approximately 10–15 minutes, stirring occasionally. The strawberries should become very soft and release their juices.
Avoid a hard boil.
4. Add the lemon.
Remove from the heat and stir in the fresh lemon juice.
5. Strain.
For a smooth syrup, pour through a fine-mesh strainer into a heatproof container. Gently press the strawberries to release the liquid, but don’t force the fruit pulp through the strainer.
For a more rustic sauce-style syrup, you can leave some of the softened strawberry pieces in.
6. Cool and refrigerate.
Allow the syrup to cool, transfer it to a clean airtight glass jar or bottle and refrigerate.
Storage
Keep refrigerated and use within 1 week.
This is a fresh homemade syrup and is not shelf-stable. I would not provide canning or room-temperature storage instructions for this recipe.

When tea becomes an ingredient, it has to compete with sugar, fruit, citrus and all the other flavours in the recipe.
That’s why we make a strong tea concentrate first. It allows the character of the loose leaf tea to remain noticeable in the finished syrup without having to steep black tea excessively long.
