One can infuse vinegar with tea to make delicious salad dressings. Warm up 1/3 cup of apple cider vinegar or balsamic vinegar just until boiling. Remove from heat and stir in 2 Tbsp. of tea of your choice. Steep until cool. Strain out the tea and whisk in the remaining ingredients in your salad dressing recipe. Good quality plain teas like Fog Mountain Green or an Oolong Tea will add great flavour.
Making your own salad dressings is much easier and quicker than you might think. A simple salad dressing can be made using 3-4 ingredients. Using an emulsifier like Dijon mustard helps to blend the oil and vinegar together and helps to make it thick. Sweeteners like honey or maple syrup are perfect for sweetening.
Matcha Poppy Seed Dressing:
3 tbsp. plain Greek yogurt 1 tbsp. olive oil or avocado oil 1 1/2 tbsp. honey 1 tsp. Matcha TEA powder
1/4 cup mayonnaise 1/2 tbsp. cider vinegar 1 tbsp. water
2 tbsp. poppy seeds
Combine all the ingredients and mix until smooth. Add more water for a thinner consistency. Makes approximately 1 cup. Keep refrigerated.
