Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon matcha powder
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Maple syrup, to serve
- Fresh blueberries, to serve
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, matcha powder, baking powder, and salt until well combined.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a lightly greased skillet or griddle over medium heat. Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
- Serve the pancakes warm, drizzled with maple syrup and topped with fresh blueberries.
