Lemon Poppy Seed Loaf

A great snack cake for lunches or afternoon TEA with a refreshing lemon taste.

1 1/4 cups all purpose flour
3/4 cup sugar
1/2 cup oat bran
1 tbsp. poppy seeds
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/4 cup melted butter
1 egg
1 tbsp. lemon juice
1/2 tbsp. lemon zest
1/2 cup strongly brewed Lemon Chiffon Rooibos TEA (Steep 2 tsp. Lemon Chiffon Rooibos TEA in 3/4 cup boiling water. Steep until cool. Strain TEA)

Preheat oven to 350°. Grease an 8”x4” loaf pan or 4 mini loaf pans.
In a large bowl mix together flour, sugar, oat bran, poppy seeds, baking powder and salt.
In a medium bowl whisk together milk, cooled TEA, butter, egg, lemon juice & lemon zest.
Add wet ingredients to dry ingredients and mix just until combined. Spread batter in pans and bake for 40-45 minutes for large loaf or 30-35 minutes for mini loafs. Bake until golden brown and a toothpick inserted in the middle comes out clean. Cool on rack for 10 minutes before removing from loaf pan.
