Chocolate Chia Pudding

A dairy free chocolate pudding to help satisfy your chocolate cravings without all the artificial ingredients in the boxed pudding. Using cacao powder instead of cocoa powder and some dates and banana as a sweetener makes this a better dessert choice.

1 cup almond milk, coconut milk or cashew milk
1/2 cup strongly brewed Rooibos tea—2 tsp. in 3/4 cup boiling water. Steep until cool. Some suggestions— Earl Grey, Coconut Almond, Raspberry Honeybush, Chocolate Mint. You could also use Earl Grey Cream Black but only steep for 5 minutes, strain tea leaves and let tea cool until room temperature. Add a little orange zest to bring out the bergamot flavour.
1 medium sized banana—the riper the banana the sweeter the pudding
1/2 avocado
1/4 cup chia seeds
1/4 cup cacao powder
4 medjool dates (soften in hot water for 15-30 min. if hard)

Place all ingredients in a powerful blender or food processor and blend until smooth. Divide amongst 4 small bowls and chill for about 30 minutes.
Top with fruit if desired. Great as a snack or dessert.
